Coastal rainbow trout fillets are harvested from trout raised at sustainable facilities in North Portugal as well as Norway. They are then cold-smoked at temperatures below 90°F, in Sweden, to enhance the natural flavors without overpowering the delicate fish. The fillets are then enrobed with a fruity olive oil that pairs so well with the dill and fennel to produce an exceptional tin of fish. The trout itself is buttery, tender, and just melt in your mouth.
